Pin-Txi Wey is the vision of Chef Fernando Trancoso, alongside his wife, Princess Estrada, whom he proudly calls the heart of the operation.
Together, they’ve built Pin-Txi Wey around a shared passion for authentic Mexican cuisine, handcrafted food, and genuine hospitality. Drawing inspiration from every region of Mexico, their menu celebrates bold flavors, traditional techniques, and a deep respect for both the ingredients and the culture behind every dish.
